Meet the fingerling potato
Named for their finger-like appearance, fingerling potatoes are typically 1 to 2 inches in diameter and 3 to 4 inches long with a rich, buttery flavor and striking color. Some varieties taste more nutty or earthy while others may seem creamier than other potatoes. Fingerlings are easy to prepare, and are great roasted, steamed, grilled, fried, boiled or sautéed. They hold up well and look great on the plate. Don't peel them. This helps keep their great flavor intact. But if you must, skins come off much easier after potatoes have been cooked.
